Just when you think Costco’s bakery has wrapped up their launch of new summery sweet treats, they toss something new - and epically delicious - in the ring. Whether it’s because of a tasty new cake, the return of their chocolate muffins or their new palmiers, Costco has amassed a cult-like following in their bakery.
The latest goody is like if Rice Krispie Treats and butter cookies had a baked good baby - and they’re called Marshmallow Crispy Cookies. “Can confirm - these are amazing and literally taste like...Rice Krispie Treats in the form of a cookie”, exclaimed an Instagram fan. Pieces of ooey gooey melted marshmallow with crispy rice cereal are folded into a buttery sugar cookie and baked to tender perfection. Just based on the video posted by @costcohotfinds, we can tell these cookies are chewy and soft, just like we like them.
At $9.99 for a 24-count package, we’re certain they’re literally flying off the shelves. “They remind me of an oatmeal cream pie turned into a single cookie”, one person said. “Tried it when [the] bakery was handing out samples and they are amazing. Crunchy, crispy crust. Soft marshmallows and chewy center. Not too sweet and the cookie tastes like a butter cookie.”

“These are the best. Put it in the microwave for a few seconds...omg so good”, exclaimed another. The positive comments on Instagram posts related to the cookie just keep rolling in.
Fans absolutely loved the s’mores cookies put out in Costco’s bakery in previous years. The launch of this new cookie prompted members to ask when the s’mores variety might be re-released. “Are the s’mores cookies ever coming back?”, asked a fan. "Where’s the s’mores!", said another.
We don’t have the answer to that, but we do know we’re running to buy a box of the new Marshmallow Crispy Cookies, especially since they’re likely limited-time only.
